Put the rice noodles in a large heatproof bowl. Cover with boiling water and soak for 8 minutes, or until softened. Seperate gently and drain. Use scissors to cut into shorter lengths.
Meanwhile, to make the stir-fry sauce, put the fish sauce, lime juice, tomato, basil and 1 tablespoon water in a small bowl and mix well.
Trim the chicken and thinly slice. Heat a wok over high heat, add the oil and swirl to coat. Add the garlic, spring onion and chili and stir-fry for 1 minute, or until fragrant. Add the chicken in small batches and stir-fry for 3 minutes, or until lightly browned. Remove from the wok and set aside. Reheat the wok between batches.
